If you like Mexican food and burritos, this is the recipe for you! These are delicious!

Ingredients:
1 pound ground beef
3 tablespoons Taco Seasoning
2 14oz cans of refried beans, we used black beans
2 1/2 cups of cooked white rice
1/4-1/2 cup water
2 cups Shredded Colby-Jack Cheese
4 Bell peppers
Olives
Tomatoes
Sour Cream
Preheat over to 350 degrees.
Cut bell peppers in half and place into a glass baking dish. Place into oven to allow the peppers to start to cook.
Brown ground beef in a large skillet. Drain most of the grease and add your taco seasoning.
Once seasoning is mixed with the meat, add cans of beans and cooked rice. If your beans are thick, add some water to thin them out some.
Allow the mixture to cook together for about 10 minutes on medium heat, stirring occasionally.
Remove mixture from heat and add in 1-2 cups of cheese, depending on your cheese preference.
Pull peppers out of the oven and spoon mixture into pepper cups, sprinkle with cheese. Place back into over for another 15 minutes, until the cheese is melted a bubbly.
Serve with tomatoes, olives and sour cream.
Enjoy!
