Can you believe it’s the last Monday of October! Where did the year go?? We are very excited for the end of October to come and go because it has been one insane month and football ends this week! We could not be more thrilled by that! I hope you all had a great weekend! This is what we are having for dinner this week.

Wednesday: Baked Coconut Chicken
Thursday: Frozen Enchilada Casserole (I made this a few weeks back and froze a second one for another time)
Friday: Black Bean and Pumpkin Chili and Cornbread
Saturday: Pizza and Salad
Sunday: Out
