My husband and I love El Torito’s Mexican corn cake that you get on the side of you plate…there is never enough. Well, a few years back we did most of our grocery shopping at Ralphs and they had the El Torito corn cake packet. We fell in love with being able to make it on our own but
the packets are a little pricey and we no longer shop a Ralphs now that we are on a tight budget. So I’ve been searching the internet for a recipe and have found a few but none where quite right.

Today, I took matters into my own hands, and it turned out pretty darn good.

Recipe: Mexican Corn Cake

1 can Creamed Corn
1/2 cup butter, melted
1/3 cup masa harina (corn flour)
1/4 cup water
1/4 cup cornmeal
1/3 cup suagr
1/4 teaspoon salt
1/2 teaspoon baking powder

Mix dry ingredients together. Add water, creamed corn and butter. Mix to incorporate. Pour batter into an 8×8 baking dish and bake at 350 degrees for 50-60 minutes.
