I really enjoy a good snack and one of my favorite is Kettle Corn. I don’t get it often because the one place that usually has it only takes cash and well, I don’t carry any cash! So I was left to my own devices to come up with something that tasted similar and came up with this. It isn’t the same texture as the kettle corn you might get at a fair but it tastes pretty darn close!

2 packages of Microwave Popcorn
3 tablespoons of Butter
2 tablespoons of Water
1 cup of Sugar

1. Pop popcorn in the microwave according to the package. Pour into a bowl and shake to get all the un-popped kernels to the bottom. I then try and scoop all the un-popped ones out. (They hurt if you bite into one. I’ve learned the hard way.)

2. In a medium size sauce pan, melt the butter. Then add the sugar and water. Bring to a boil and boil until the mixture forms sticky bubbles, about 3 minutes.

3. Pour the mixture over the popcorn and toss to combine. There may be extra sauce depending on how sugary you like it. Start with half and see what you think.
